Writers: we sit a lot, and we have a lot of deadlines, which means that the longer we sit, the more some of us tend to eat badly. When you believe you don’t even have time for a shower, you’re sure not going to take time out to fix and eat a decent meal.
UNTIL NOW.
It’s been a while since I posted a recipe on here, but this week I have a grant application due, which means I needed a blog post to help me to procrastinate, as well as an extremely fast, amazingly yummy, totally healthy, completely filling meal to put in my tummy. Enter,
Grant Application Stew:
- cover a handful or two of red lentils with twice as much water as lentils
- bring to a boil, then turn temp down to lowish until lentils are soft (’bout 10 minutes with red lentils)
- add one can tomato paste, one can of water, and a bunch of frozen spinach
- add a teaspoon to a tablespoon each of garlic powder, onion powder, basil, and chili garlic sauce
- stir & let simmer until spinach is warm
- add salt and pepper to taste
- serve over rice, pasta, couscous, quinoa, bulgur, barley or anything you have that makes sense, or do as I do and eat it at your desk out of the pot, using the last clean spoon in the drawer.

End to end, the whole thing should take you about 15 minutes total. Once you taste it, you will see that’s not even the most awesome thing about it.
