MMM Lentils
If you have a can of
I just threw this together off the top of my head and it took all of 5 minutes to put together and turned out like something I could eat 4 times a week, so I’m going to write it down and share it.
In a pot:
can of diced tomatoes
1/2 cup red
1/2 tsp each garlic powder, onion powder, basil, tarragon, cinnamon, curry powder
1/4 cup soy milk
cup water
Bring to a simmer over medium-high heat, reduce to medium-low, cover, simmer until lentils are tender.
Serve hot, over whole wheat Scooby Doo noodles.
That’s it. Nothing to cut. Nothing to wash. And it’s cheap.

I loooove this recipe. Perfectly vegan, perfectly high in protein and low in fat (I serve it over quinoa) and absolutely no chopping of anything. I’d never eaten lentils prior to this and am enjoying them immensely. Thanks so much for this recipe Jill.
